Where this comes from

Birria from Jalisco, cooked the way Tomás's family cooks it in Cocula — goat traditionally, beef here because that is what his kitchen in the city can get.

The creator’s note

At home this was goat, and it was Sunday, and it took all morning. I use beef shin now and I say so — I won't call it something it isn't. The broth you're left with matters more than the meat.
